Ingredients

Scale
  • 4 cups (450g, 1 lb) powdered sugar
  • 3 ¾ cups (560g, 19.75 oz) gluten-free measure-for-measure flour
  • 1 ½ cups (300g, 10.5 oz) granulated sugar
  • 1 cup Andes Peppermint Crunch Baking Chips or Andes Peppermint Crunch Thins, chopped
  • 6 tbsps (84g, 3 oz) butter, softened
  • ½ cup (113g, 4 oz) butter, softened
  • ½ cup (110g, 3.9 oz) vegetable oil
  • 1 cup (240g, 8.5 oz) sour cream, full fat
  • ⅓ cup (80g, 2.8 oz) sour cream
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla extract
  • ½ tsp peppermint extract
  • ½ tsp peppermint extract
  • ½ tsp vanilla extract
  • 1 pinch of salt
  • 1 tiny drop red food coloring

Instructions

  1. Preparation: Preheat oven to 350F (177C) and line two baking sheets with parchment paper or silicone mats.
  2. Creaming: Whip butter in a mixer until fluffy, then integrate vegetable oil, sour cream, egg, granulated sugar, vanilla and peppermint extracts on medium-low speed until smooth.
  3. Dough Formation: Gradually incorporate baking powder, salt, and gluten-free flour, adjusting with additional flour if dough feels sticky. Gently fold in chopped Andes Peppermint Crunch.
  4. Shaping: Roll dough into quarter-cup sized spheres, coating each generously in granulated sugar. Place on prepared sheets with ample spacing, then delicately flatten to half-inch thickness using a sugar-dipped cup.
  5. Baking: Bake for 6-8 minutes, monitoring closely to maintain a soft texture without browning. Cool completely on baking sheets before transferring.
  6. Frosting: Whip butter, sour cream, powdered sugar, extracts, salt, and food coloring until silky smooth. Lavishly spread over cooled cookies.
  7. Finishing: Refrigerate for minimum one hour to set, enhancing flavor and texture before serving.

Notes

  • Precision in Butter Whipping: Whip butter until light and airy to ensure a soft, tender cookie texture that melts in your mouth.
  • Flour Finesse: Add flour gradually to prevent clumping and achieve the perfect dough consistency, avoiding dry or tough cookies.
  • Temperature Technique: Watch cookies closely during baking to maintain a soft center – they should look barely set and not browned for ultimate delicacy.
  • Cooling Crucial: Allow cookies to cool completely on baking sheets before transferring to prevent breaking and ensure structural integrity.
