  • 1 tablespoon 1 extra-virgin olive oil

  • 0.5 0.5 small onion (finely chopped)

  • 2 tablespoons 2 garlic (minced)

  • 14 oz 14 tomato puree

  • Kosher salt, ground black pepper, and crushed red pepper flakes (to taste)

  • 2 tablespoons 2 fresh parsley (chopped)

Directions

  • Prepare your oven by preheating it to 400°F.
  • For the chicken:
  • Combine panko bread crumbs, garlic powder, and parmesan cheese in one bowl. Then, place 2 other bowls, one with beaten eggs and one with flour, next to it.
  • Season the chicken cutlets with salt and black pepper. Then, dredge it through three bowls in this order: flour, eggs, and bread crumbs. Afterward, place the prepared chicken on a plate.
  • Pour the olive oil into a deep cast-iron skillet and heat it over medium-high flame. When it’s hot enough, drop the chicken cutlets and fry until both sides turn golden brown (about 5-6 minutes). Remember to flip halfway through.
  • Transfer the fried chicken onto a paper towel-lined plate to drain the excess grease.
  • For the marinara sauce:
  • Heat the olive oil in another skillet at medium heat. Then, stir garlic and onion until soft.
  • Afterward, pour in the tomato puree with other seasonings (salt, black pepper, and red pepper) and let the mixture simmer for 10 minutes. When it’s done, sprinkle some parsley on top.
  • Transfer the sauce to a lightly greased baking tray and place the chicken cutlets on top. Place mozzarella cheese on the chicken before baking it for 10 minutes until the cheese has melted.
  • Serve with some extra parsley as a garnish.

Notes

  • The total time above is for making 6 servings.
  • The oil should be hot when you drop the chicken cutlets to fry. Otherwise, the bread crumb coating will fall apart, and the chicken will become soggy.
  • If your pan doesn’t have enough space to fry all chicken cutlets at once, feel free to fry them in batches to ensure their crispiness.
